Ingredients
• Dry red chillies – 10–12 (soaked, drained)
• Garlic – 1½ tbsp
• Ginger – 1 tsp
(Grind all into a paste)
• Water – 1 cup
• Sugar – ¾ cup (150 g)
• Vinegar – 3 tbsp
• Salt – ½ tsp
• Kashmiri chilli powder – ½ tsp (optional)
Thickener
• Cornflour – 1½ tbsp + Water – 3 tbsp
Method
1. Heat water + sugar till dissolved.
2. Add chilli-garlic-ginger paste → cook 4–5 mins.
3. Add salt, vinegar & chilli powder.
4. Add cornflour slurry → cook till glossy & thick.
5. Cool and store.
